A minimal stand-in for the fields of *ecdsa.PrivateKey these tests inspect, plus the PKCS#8 DER of the private key so self_sign can actually sign with it.

Adaptation from Go: ca_test.go calls selfSign(key, ...) with a real *ecdsa.PrivateKey it generated itself. The Rust port’s self_sign generates a fresh key internally when given KeyInfo::default() (empty pkcs8_der), so callers that don’t already have a key (like new_ca) can just pass the default.
